This keto meatloaf is also dairy-free and has a nut-free option.
MEATLOAF RECIPE
This meatloaf recipe is super simple.
You can use ground turkey or beef in this keto meatloaf recipe and you don’t need to do anything differently if you decide to use one or the other.
We typically make this low carb meatloaf with beef but not everyone likes beef or can eat it. I have a friend who is allergic to beef.
MAKING LOW CARB MEATLOAF
- You can use almond flour, crushed pork rinds or flaxseed meal in your low carb meatloaf.
- Make sure all your ingredients are sugar-free and low carb.
- Use a gluten-free Worcestershire sauce in our low carb meatloaf.
- You can leave out the veggies if you like, but they add flavour and moisture to the recipe.
INGREDIENTS
- 1 lb. lean ground beef (or ground turkey)
- 1 large egg, room temperature
- 1/4 cup sugar-free ketchup
- 1/4 cup mustard
- 1/2 small onion, diced
- 1/2 small zucchini, shredded
- 1/2 cup fine ground almond meal (or pork rinds)
- 1 teaspoon salt
- 1/2 teaspoon of black pepper
- 1 teaspoon gluten-free Worcestershire sauce
INSTRUCTIONS
- Preheat oven to 350°F (180°C).
- In a massive mixing bowl, mix all components.
- Press the meatloaf mixture into a loaf pan, or 8×8 square pan.
- If desired, brush the pinnacle with sugar-loose ketchup halfway via baking.
- Bake 1 hour.
- Let cool for ten minutes. Serve warm.
- Store leftovers in a hermetic container in the refrigerator.
